Roe deer salami

Roe deer salami is made according to an old recipe of roe deer meat from the South Tyrolean forests and pork meat. Contrary to the deer salami the venison flavor is subtle. The roe deer salami gets its unique flavor from a blend of seasoning and by maturing in the fresh mountain air.
